This NOS provides a framework for developing and introducing new menu items, focusing on the importance of menu variety to engage customers, while considering dietary requirements, ingredient sourcing, and feedback collection for sustainability.

Performance Criteria

• Consider food combinations, flavours, and dietary needs when suggesting new recipes.
• Calculate ingredient ratios, cooking times, and temperatures for various quantities.
• Identify suitable suppliers or supply sources.
• Determine methods for presenting, holding, and distributing products.
• Cost recipe suggestions and assess available resources.
• Communicate suitability of new menu items per organizational systems.
• Suggest menu layout and presentation improvements.
• Implement recipe suggestions following organizational style and customer expectations.
• Ensure staff have necessary training and information for executing new recipes.
• Collect feedback from staff and customers on new menu items.
